With its recent opening at 122 W. Crawford St. in Salina on March 20, Sam’s Southern Eatery has brought the locals a new dining experience. Hutchinson’s branch, now under Ashiedu’s management since last summer, also reflects his commitment to quality. “The food is amazing,” says Ashiedu. He emphasizes the restaurant’s custom batter blend of cornmeal and spices, which has quickly gained a loyal fanbase in the area.

Ashiedu’s attention to detail, especially around freshness, has made an impression on the community. “We clean the fryers every day so it’s not greasy,” says Mahmoud Bayatena, the Hutchinson location’s manager, ensuring a clean, quality taste every time. Repeat customers frequently visit for classic Southern items such as crab, fried green tomatoes, and oysters.
Diners like Daryl Adams, a Hutchinson regular, appreciate both the flavor and value. “The portions are so large we often split it,” Adams shares. This approachability and affordability are part of what makes Sam's Southern Eatery so popular with Kansas locals.
